Finger limes, are also known as “citrus caviar” to top chefs worldwide! These unique finger size pieces of citrus fruit are probably more familiar to our friends “down under” in Australia from where they originate. The small, round, firm, “pearls” of pulp inside the fruit do resemble caviar, and even burst open when bitten. The word Etrog (a.k.a. Citrus Medica), refers to the incredibly flowery-fragrant, yellow, medium size citrus fruit that sort of looks like a bumpy lemon. However, you might know them for their religious purpose. Etrogs are used during the week-long Jewish holiday of Sukkot. In Modern Hebrew the word etrog is also the name for citron of any variety or form, whether Kosher or not. Typically, unless you have your own tree, etrogs are not always easy to find when you need or want them…but now you can have them directly shipped right to your door from your favorite name in specialty citrus…Pearson Ranch. Are Etrogs used for more than just religious ceremonies? You bet they are! Having been around since “Biblical” times, people have had centuries to discover and create new culinary uses for the humble etrog. Pink Lemons, they really do exist! Variegated Pink Lemons are one of nature’s greatest “little happy accidents”. The Variegated Pink Lemon is also known as a Variegated Eureka Lemon, because they were discovered growing on their own small branch or “shoot” on a regular Eureka Lemon tree. What can you do with pink lemons from Pearson Ranch? Anything you would do with any ordinary lemon. So, in reality you really can make “honest to goodness” pink lemonade without having to use chemicals or a container of store bought pink lemonade “crystals” with “who knows what” lurking inside. They taste like regular lemons, have a similar shape of lemons, but both inside and out they sure look a whole lot different. With their green and white stripes on the outside and their light rosy pink color on the inside, these pink lemons are sure to please the exotic fruit lover in all of you. So add a whole new twist to your regular kitchen “must have” of lemons, and let’s get cooking!

Meyer Lemons are believed to be a “cross” between a regular lemon and a mandarin. They also tend to have a more smooth and “rounder” texture than your average lemon variety. After this wonderful citrus fruit was discovered in China, then brought to America, it seems that ever since, chefs and great cooks everywhere have rejoiced! And with their sweeter, less tart and abundant juice content, it is no wonder even the famous of the famous T.V. chefs and cooks sing high praises for the Meyer Lemon.
