Seville Oranges, SOUR Oranges or as some like to call them, “Marmalade Oranges”... whatever name you give them, Pearson Ranch now has them! Native to Southeast Asia, most citrus experts believe them to be (most likely) a cross between a Pomelo and a Mandarin Orange. What makes Sevilles so special? Because Seville Oranges have a higher amount of pectin than regular sweet oranges, and therefore giving a better set and a higher yield, they are prized for making the best orange marmalade! Sevilles are also used in making compotes as well as orange-flavored liqueurs. The unripe fruit, called narthangai, is commonly used in Southern Indian cuisine, and if you are a seasoned chef, you may have even used Seville Oranges in making a bigarade sauce for the French classic, Duck a l'orange.

These are so hard to find! They make terrific marmalade, but this year they went into orange gin (shave off the peels (without the pith) and add peels to gin in a big Mason jar, along with a couple of handfuls of rock sugar; shake daily until the sugar dissolves, then put the jar away where you won't be tempted & wait at least two years. Supposedly you can wrap up the jar securely and drive around with it in your trunk, to speed up the infusion - no idea if that works!).
The insides of the Sevilles can be juiced; freeze the juice and use in marinades. And every year I regret not buying more.

We got 14 1/2 pints of marmalade out of two boxes of Sevilles and it's
delicious! I had one bad orange, but I rather thought it was my fault b/c I didn't take all of the fruit out of the boxes right away. I got the flu just before they arrived, so it took me a couple of days to start cooking. All in all, the fruit was beautiful and healthy and perfect for my purposes.

Fruit was perfect, used for marmalade. It is very difficult to find Seville oranges now. I have purchased from Pearson for many years now and hopefully for many years to come. If not perhaps sell me the trees!

I have been buying a yearly 5 pound of Seville oranges for more than 15 years but none had ever surpassed the ones from Pearson farm. My whole family is grateful to them each year after I make a delightful marmalade
