Pink Lemons, they really do exist! Variegated Pink Lemons are one of nature’s greatest “little happy accidents”. The Variegated Pink Lemon is also known as a Variegated Eureka Lemon, because they were discovered growing on their own small branch or “shoot” on a regular Eureka Lemon tree. Mandarins are mainly seedless and sweet and a part of the “easy peeler” family of citrus. Mandarins are distinguished by their “puffy” and loose outer peel that makes them a breeze for anyone to peel. Top that off with their delightful fragrance and sweet, delicious, juicy citrus flavor, and you have quite a popular and wonderful healthful snack for everyone! Both low in acid and high in sugar makes them ideal for use in the kitchen too. Limequats – 1 Pound
Limequats, so tangy! Calling all creative chefs, cooks, and mixologists…The LIMEQUAT is now here! Limequats, as you might imagine, are a cross between a lime and a kumquat. The fruit is smaller in size and oval in shape, like a kumquat. Their color tend to be mostly yellow (with some green) and they do contain seeds. Limequats have a sweet tasting rind and an intense “tart-sweet” pulp that tastes similar to limes but more acidic. Due to their “mouth puckering” characteristics, the uses for the limequat are probably better suited for cooking than trying to eat them as a snack. Their tart juice and pulp make for some seriously great jams, or preserves. Limequats can also be used in most other recipes that call for sour lemon flavors, but leave it to your “culinary imagination” to utilize them in ways yet unknown! Do you like the taste of intense lemon-lime flavors in your drinks? They go especially well in mixed alcohol drinks or squeeze one into a tall glass of ice tea or ice water for a “bright” flavor sure to give your taste buds a lift.

Centennialquats – 5 Pounds

Centennialquats are very similar to the Mandarinquats in size and shape. However, Centennialquats tend to have variegated colors on the rind, which is less pronounced the deeper the orange color becomes. Also, the flavor is more tart than that of the Mandarinquat, but still has that “mandarin-like” taste. So, if you like the juicy-tart citrus taste in a small little flavor packed kumquat size piece of fruit, then you will really enjoy Centennialquats. Like kumquats, Centennialquats are usually eaten whole, peel and all, however they do have small seeds. Best part of Centennialquats are how versatile they are. Think of all the great ways you can use them in your kitchen…you can eat them as is as a healthful snack, or sliced up in salads for that added “zing” of flavor. Of course they are awesome when used in preserves or purees. The juice can be used in marinades or cocktails, and even made into syrup. The Yuzu [pronounced: yoo-zoo] is a small Japanese citrus fruit that resembles the outward appearance of a tangerine in both size and shape; however that is where the similarities abruptly end. The yuzu is yellow in appearance, with many large seeds and a small quantity of bitter or sour juice. In fact, some yuzus lack juice entirely and are instead filled with a mass of just pith and seeds! So what the “heck” do you do with yuzus if you can’t eat them?
Here is where traditional Japanese cuisine comes in!The Yuzu is a commonly used fruit in Japan. They are very aromatic with a deep “citrusy” floral scent. The juice flavor is like a tart, citrus, “fusion” of lemon and lime. The fragrant peel is often minced small and added as a garnish to both soup or broiled or simmered fish. Sauces are often made from yuzu, as well as candied peel from the rind. You might recognize a “hint” of its flavor here in America from your favorite Japanese restaurant, if you have ever used soy-sauce ponzu. Now you can find yuzu being used many different culinary ways, including yuzu “essence” being infused into “high end” vodka. Calamondins – 5 Pounds

Calamondins, or as they are sometimes called in the Philippines; calamonding or calamansi are believed to be a natural hybrid, parented with the more familiar kumquat, and more than likely Chinese in origin. The peel is thin and smooth, and when fully ripe, bright orange. The flesh is orange, juicy and and very acid. These miniature orange-like fruits have a strong tart flavor that is often used in Thai cooking and can be used in place of lemon. You can use calamondin puree in cake recipes, and they make an excellent fruit for making marmalade.
